i made this to say goodbye to the summer. i love strawberries and have fond memories of a strawberry cool whip pie my mom used to make for me. i made this one with my fave product, Healthy Top. just make or buy a graham cracker crust, mix pureed strawberries with prepared Healthy Top whipped cream and add to crust. chill for a few hours (who am i kiddin, i eat a slice within a few minutes) to set and serve. top with additional sliced strawberries to make it pretty. i hope you like it as much as i do.

i wanted to make a strawberry shortcake this summer and really wanted something that looked and tasted and held up like Cool Whip, from back in the day (my days of eating it..i know they still sell it). i tried whipping coconut milk/cream, cashew cream, etc. Then i found this on the internet and bought it at Whole Foods. It is AMAZING! It is healthy (ahem, as the name suggests), made of coconut oil, almonds, cashews, almond oil, and cane sugar. i now use it in any recipe i can, from mini strawberry shortcakes on graham crackers to tiramisu (just added a lil vegan cream cheese to it). it is simple to make and stays firm, especially in the fridge. you just whip it in a stand mixer or with electric beaters for 1 to 3 minutes (i go the full 3) and voila!.. use it as you would whipped cream. oh, and it’s SO much better than the vegan whipped cream in the aerosol can..you know, the stuff that you put on pumpkin pie and then it falls into a liquidy mess.
the desserts i make will forever be better!
