I LOVE CHOCOLATE. visiting my friend’s new chocolate factory in Raleigh, NC was heaven. Videri=the best chocolate i’ve ever had…mmm.
Videri is so awesome. My friend Starr and her super cool husband Sam Ratto opened Videri last December. It’s in downtown Raleigh, across from the famed The Pit BBQ restaurant, where a picture of Bobby Flay hangs on the wall to show his approval. I got insane BBQ tofu there, but that’s another story/blog post..Anyway, my friend Allison and i had fun “working” there one afternoon, which really meant eating chocolate and helping package and number bars, meeting the crew and learning the process. The facility is nut-free (which is rare and awesome for people with allergies), they use great beans and organic ingredients, 3 outta the 4 bars they currently make are vegan (me and allison were SOOO stoked on this), and they do it all themselves, right there under one roof! They even let you tour the facility anytime (which is incredibly beautiful and part of the old train depot) and will teach you how it goes from bean to bar, you can smell the incredible aroma in there from outside the front door, the staff is sweet and helpful, and there are free samples of all the bars. Are you booking your ticket to Raleigh yet?
FOOD LATELY. these are a bunch of photos of food i’ve been making lately. on weekends i tend to make fun, time consuming breakfasts. i love breakfast! egg mcmuffins were a treat when i was little, since they were fast food, but i make this version once a year probably, and every single time i think “why don’t i make this more often!?”.. seriously, they are SO good! the usual oatmeal and fruit and toast also appears. a friend of mine made me almond donuts a while back, and with a little freezer magic, they were reborn this past weekend with some coconut frosting. and YES, they taste as good as they look!…i also made this amazing salad with veggie sausage, red onion, apples, and slivered almonds with balsamic dressing that tasted just like my favorite Thanksgiving flavors. these huevos rancheros are probably laughable to meat eaters and i realize mine looks like some hippy-gringa version, but guess what? i don’t care. they were delicious. the salty Oreo ice cream was inspired by my fave shop Scoops, and is quite easy to make..and quite addicting. And finally, the beautiful cake was a tester for my friend’s upcoming wedding. i’m gonna be making a few vegan wedding cakes for about 10 of us. the flavor of this cake blew me away. there were A LOT of loud “mmmm” noises being made all week around here. the topping is this beautiful candied lemon peel. i thought it looked nice and tasted even better, so i was very happy. one of my friends said it looked Martha Stewarty so that was all i needed to hear. done. best compliment ever! (by the way, the Martha link is such a good one, click it!) i can’t wait to make (and eat) this cake again next month.
